Availibility of non-reserved lodging

If the Pound keeps up its relationship to the US dollar, we will go to the UK this year. We would like to make lodging reservations in the cities we will visit--London, Manchester, Glasgow--and book the rest a day or two ahead, of the day of our arrival thus permitting us to stay in one spot for a while or leave it if we feel we have seen enough.We plan to spend up to two weeks in Scotland, about five days in London, and the rest elsewhere in England.

We generally travel either in the late spring or early autumn. Which of May or September would be better for this purpose. I am ignoring the weather factor for now, as predicting weather is very difficult.
