Any advice for our 6 restless nights in Bavaria?

Hello everyone. Once again I have had a blast reading the board thoroughly during my preliminary planning of a 9 night trip flying into Munich and out of Venice. The airfare is set, and we are flying out of Venice only because I was able to secure a ridiculously low airfare with the unusual itinerary (with a 24 hour layover in Copenhagen as a bonus). Both a blessing and a curse, this, as I would love to spend more time in Germany, but as long as we’re going to Venice I’ve decided we should commit at least three nights to it.

This trip will be my wife and mine’s first extended trip without the kids in 17 years and we’re going to take advantage of it. Not by having a slow romantic trip – not for us! We want a fast-paced, jam-packed whirlwind (with a couple of breathers of course). We’re finally rid of the balls-and-chains! :-) I posted a photo trip report of our last trip, which some may consider hectic, but we thought a little slow, here: http://www.fodors.com/community/europe/photo-trip-report-belgiumfrancegermany.cfm

Trip is on August. Most drives will be 30 minutes to an hour, with a few exceptions.

Fly into Munich early a.m. and rent a car at the airport. (Munich will wait for another trip).

1. Weltenburg Abbey for a welcome breakfast and beer, then afternoon and overnight Regensburg.
2. Regensburg till 3, then Straubing for Gäubodenvolksfest untill late, overnight Deggendorf (watch that beer consumption!)
3. Day in Passau (organ recital) then long drive (2hrs) to Hallstatt. Overnight Hallstatt.
4. Halstatt morning, Gosauseen afternoon, and maybe Hohenwerfen?, overnight Salzburg
5. Salzburg, overnight Salzburg.
6. Herrenchiemsee, Munich evening, overnight Sleeper Train to Venice.
7. Venice
8. Venice
9. Venice

Yes, it is fast paced. This is how we have fun. Our interests are beer and wine, and old architecture/urbanscapes/traditions, mostly the last. Not museums.

Besides hoping everyone will chime in with random advice, my main concerns are Passau (other options, Burghausen, a night in Munich?) and why does Hohenwerfen, which looks so amazing, get only a brief 1 star mention in my Michelin Guide? Maybe Hohensalzburg will be enough?
