annual flower festival in Noto, Sicily

We're now doing our serious planning for a May trip to Sicily. We definitely will go to Noto, but are torn about when to go. The annual flower festival sounds fabulous, but we know it will be super crowded and aren't sure we'll then get to poke around the shops and just have a nice time strolling around. We will do it as a day trip (and not overnight) so would appreciate any comments about the pros and cons of going when the festival takes place. I'm also thinking that if we go, maybe we'd go on Friday and see the art in process and maybe THAT would be less crowded than Sat./Sun. Thanks!
