Amsterdam with kids- only 3+ days

WIll be in Amsterdam later this month for 3 and a half days + 1 day excursion to Alkmaar. Would like to see a lot of sights and culture but do not want to overwhelm the kids either (ages 8, 10, 10). I've booked tickets for the Anne Frank house, the excursion and a 3 hour city bike to tour- otherwise the schedule is wide open. Please suggest additional sites and indicate which day they would fit best.

Tue: arrive in afternoon. Walk arround, stroll the Jordaan(?) and do canal cruise. Is there a particular boat cruise company you'd reccommend?

Wed: Portugese synagogue and Jewish quarter/musesum, Vondelpark and Van Gogh museum
Thur: Dam, Royal Palace, Nine street, Pancake Bakery, Anne Frank house (booked for 2pm), Westerkerk.
Friday: return from excursion arround 2:30pm. Rijksmuseum?
Saturday: return from historical city bike tour at 1pm. NEMO? Other suggestions?

Where should I add in the Albert Cuyp market?
Is it worth going to the Artis zoo (have been to great zoos in the US, but the kids always love to see animals)? Should we walk arround the Plantage?

I would appreciate any suggestions for additional sites, regrouping of sites, restaurants, etc.
