Are there airlines that will let you change dates (or change with a fee)?
I may be changing jobs. If not, I would like to plan a trip while I am off. However, if I start a new job, my availability could change.

Most airlines will allow changes - if you buy the right ticket in the first place
Domestic flights usually charge a $150.00 change fee, international flights are more to change.Check each airline for their change fees and qualifying fares.
And some tickets are not changeable. Make sure you buy a ticket that is, as alanRow notes above.
Besides the change fee, you can be requested to pay the difference in price from the original flight to new price, if any, on new date/flight.
Changing the route is harder and less possible than changing the date.
You could buy "cancel for any reason" insurance.. read the fine print.
Maybe this is the time you should not plan too far in advance. Plan on a driving vacation ..

You have a point about driving vacations- but I've got some pent-up demands to go somewhere too far to drive.
