Aegean or Mediterranean side to Turkey?

The more I read, the more time I want to add this trip so I can see it all…but I can’t. We are limited to 2 weeks, and we do not travel fast…I know we want to see Istanbul (3 or 4 full days?), Cappadocia (2 or 3 full days?) and the rest (4-5 days) exploring ruins and beautiful nature.
I am so torn between the Aegean side and the Mediterranean side. My first impression is that the ruins are “better” on the Aegean side, and the nature more beautiful on the Mediterranean side. Of course, "better" and "more beautiful" are relative. And then, that turquoise Mediterranean water…

So please help me decide…we will go early Oct next year, and we do not care about swimming. But I love photography, so beautiful scenery is a must. We will have a car, and fly between Istanbul – Cappadoccia and probably our 3rd destination, if needed. We would prefer a single base in this 3rd area, but would be open to 2 of them, if airport logistics are ok for both of them.
What do you recommend?
