Advice on Budapest + Croatia Itinerary - 2 week trip

Hello! I am finalizing an itinerary for a 2 week trip in Budapest and Croatia. It will be my husband and I, and we will be traveling September 19th - October 4th. I would love any advice on the itinerary, and I also have a few questions.

Day 1 - USA - Budapest; arrive at 10am
Day 2-3 - Explore Budapest
Day 4 - 6am train to Zagreb (arrive at noon) spend the day and night in Zagreb. Rent a car
Day 5 - Wake up early, drive to Plitvice Lakes. Spend the night
Day 6 - Drive to Dubrovnik; afternoon/evening in Dubrovnik
Day 7-8 - Explore Dubrovnik
Day 9 - Drive to Split
Day 10-12 - Explor Split; possible trip to Hvar
Day 13 - Wake up and drive to Rovinj; arrive around 1pm
Day 14 - 15 Explore Rovinj
Day 16 - Drive to Zagreb; flight back to US

The things we are looking to do are:
#1 - Enjoy the coast / beautiful scenery. Would like to spend time on beaches, kayaking / canoeing.
#2 - Eat / drink at local restaurants and bars.

Questions:
1) Is the weather warm enough to swim / spend time on the beach?
2) If we were to narrow it to 4 out of the 6 destinations, which would you cut? Budapest, Zagreb, Plitvice, Dubrovnik, Split, or Rovinj?
