advice in France
My husband and I are going to Italy and France and will be driving from northern Italy to France. We will only be there a week and 3 nights are in Paris, so I think I would like to spend 2 nights in Avignon area (St. Remy) and 2 night in Burgundy Dijon area (Beaune probably).
Any suggestions about what to do, where to stay, or where to eat?

You're stretching rather far apart to include Avignon area.
I made a trip of Torino to Paris via Beaune last September.
How are you gettingfrom northern Italy into France? You may find that driving an Italian car into France to return it there, ultimately, will cost a lot for the drop charge (unless you rent it in France and drive it into Italy).
Where in northern Italy are you hoping to include in this trek back to Paris? It will influence (how and) where you cross the Alps.

This is a trek. I suggest you look into low-cost European flights to cut down on costs and time. Check out www.whichbudget.com.
As for what to do, what attracts you to these places? Why did you decide you wanted to go there? What are your interests? I could recommend the snail farm on the road to St-Rémy, but I'd have no idea if you'd be remotely interested.

we are renting a car in Milan and returning in Paris. There is a drop off charge of about $300, but when I calculated the rates for returning in Italy and then renting again in France and returning in France, it came out the same believe it or not. Also, there is no train from torino to avignon area (as far as I saw).
We will be in Italy mainly for business and will be in Verona at first, then Fruili, then Piemonte. Lots of driving I know.
France will really be the leisure part of the trip and I really do want to see avignon. I know that there is about a 300mile distance between barbaresco and Avignon and another 250 miles to Beaune. I know that is a lot, but we have done it before in Italy.

Okay, since you know what you are facing (with the drop charge)... and since you are (maybe) "driving fools" (as I have been, on more than one such similar trip!)
... and admittedly, this is easier to tolerate, doing the trip as "just a couple"...
...then, in that case, it sounds like you have already thought this through appropriately.
The much spoken-of Hotel Grillon, in Beaune might meet your needs nicely.
I do not know lodging in St Remy.
If you have a chance to see "un spectacle" at the Theatre Antique in Orange (while you are in the Avignon area), I strongly recommend that you consider it.

You will really only have 1 1/4 days in Provence & 1 1/2 days in Burgundy.

If this was my trip, I would choose 1 region only. Both Avignon & Dijon have frequent & cheap TGV service to Paris, so I would dump the car in either Dijon or Avignon and take the TGV back to Paris - instead of driving.

If you're going to stop in Dijon, check for Coco's apartment and see if it's available. It's very nice.
