Sorrento is nice, however, I want a smaller and more quiet town/city/village to stay in to look out to Mt. Vesuvius, any ideas? It's such a awesome view! Any hotel ideas would be welcome too. Thanks so much

You might think about Castellammare di Stabia, which is nearby.
As for hotels, this one seems pretty well served, and it looks out onto Vesuvius itself. Don't like the name but the Vertigo Suite could be what you're after!

The Hotel Belvedere was a pool 1/2 way down to the sea. The hotel is about 1 km west of Amalfi. We stayed there in '02 & enjoyed it. Rm 2 (or 102?) shares a very large veranda with views to die for. The price is around your range.

My choice for just outside Sorrento is Grand Hotel Cocumella in Sant' Agnello. However, this property only works within your budget if you can take advantage of their current "City Escapes" offer of 3-nights-for-the-cost-of-2 before September 30, 2009.

I haven't been to San Marco di Castellabate, but it's not a location I would choose for exploring the Sorrentine Peninsula. If you just want to park yourselves and enjoy the scenery, it looks beautiful and certainly less hectic. Obviously, no view of Vesuvius from here.
Le Axidie has a fabulous view of Vesuvius and the Bay, but being at the bottom of the cliffs it might be isolated for exploring the area easily. I also couldn't tell how many dining options there are outside of the hotel. Will you have a car?
True about the bottom of the cliffs and isolation. We will not have a car however the ferry "Metro del Mare" leaves people at the little dock by the Le Axidie and the buses are on each hour (I checked). These towns Vico Equense and Sant' Agnello do they have little shops to explore and restaurants/cafes? Thanks for the "pool" info
Yes, most definitely they have shops and restaurants. From what I can understand from my reading, Vico is quite a good food town. There is a Michelin-starred restaurant in the Seiano area of Vico, Torre del Saracino, but there are also many other, less lofty places to eat. Like this one:

Some of hotels in the Vico area offer free shuttle to the train/town, according to theiri websites.
Try Il Nido Ristorante hotel overlooking Sorrento, about 5kms out of Sorrento. Our balcony overlooked Mt Vesuvius, you could almost reach out and touch it!!! Stunning views, even more stunning hotel. Food is exquisite and really cheap at the restaurant of the hotel. You can eat out on the balcony overlooking Vesuvius.

The hotel has a free shuttle bus that takes you into Sorrento everyday and runs till 11pm. We used it often.
