I found that a day trip from Siracusa was more than enough to see Noto.
I'm not sure that there is even a hotel in Noto; there are probably one or two B&Bs and maybe an agriturismo or two relatively close by.

We used Noto as a base to visit the Riserva Naturale di Vendicari. We did not have a car.
If you are going to Noto only to look at the architecture, one day will suffice.
We stayed at the Rooms Ambra (www.roomsambra.com). Our hosts were wonderful, helping us in many ways, and at all hours, when they discovered that our bags had gone astray somewhere between Montreal and Rome. I will never forget the husband crying out "Mamma mia!" and smacking his hands to his forehead when he discovered our predicament.

Thanks, JQ. Vendicari is just what I had in mind. We could do Noto and Vendicari as separate day trips from Syracuse but thought it might be nice to stay in a smaller town.
Did you also get to Cava Grande del Cassible by any chance?
How was Vendicari?

Did not get to the Cava Grande del Cassibile (but would have liked to).
We visited the Vendicari mid-September, and two of the three lagoons were dry, but the third had plenty of flamingos. Bring your binoculars. The path that follows the water is an easy hike, but has no shade and can be hot. The beach is covered with dried aquatic plantlife that has washed ashore. The shallow water goes out a long way on an easily-walked sandy bottom. When we were there (a Tuesday), there were fewer than ten people.
