A few 7-day Travelcard questions

Will someone confirm that 7-day travelcards on Oyster cards are my best option, please?

We are flying into LHR (next week!)
- Tube LHR to S. Kensington (on Day 1)
- 7-8 days of tube/bus transportation, much of it during peak hours.
(Day 8 will only be to get to St. Pancras to catch eurostar. Perhaps we will just take cab.)
I'm not interested in the 2-for-1 offers, therefore, may I purchase the Travelcards loaded onto Oyster cards upon arrival at LHR and add some cash for the tube ride from LHR to S. Kensington and be done with it? And without needing to provide a photo for photocard?

Also, do Travelcard-holders qualify for any discounts for train travel to Windsor or Newbury (Highclere Castle)?
