9-10 days in Spain

My wife and I are thinking about a summer trip to Spain for 9-10 nights next summer. I have only been to Italy and I am completely unfamiliar with Spain other than what I have read about Madrid, Toledo and Barcelona. While I would like to see the three cities I mentioned I would also enjoy seeing some smaller historic towns (such as some of the walled in towns we visited in Italy). I live in Florida so I am not that interested in staying in beach towns but would like to go to one or two for lunch or dinner. I would like to see the famous fort and an art museum or two but I do not want to plan a trip around these inside activities.

What I was thinking is possibly 2-3 nights in each of Madrid and Barcelona. One night in Toledo and 2-3 nights somewhere else. Preferably a quieter town or area such as the wine country. Four destinations may be pushing it.

Your thoughts and suggestions are greatly appreciated.
