7 nights in Ireland

I'm taking a trip to Ireland in October and would love some advice about what to see around Limerick. We bought our trip through Aer Lingis and they have us staying two nights in Dublin, 2 in Limerick, 2 in Killarney, then 1 back in Dublin before flying out (can't change the hotels as they were booked for us). We have a car and I've planned most of the driving trip, but there doesn't seem to be much to see/do in Limerick. The two things I found are King John's Castle and the Rock of Cashel. Good choices? Anyone have advice?

Also, I really want to see the Cliffs of Moher, though it's really not on the way. Thinking about taking a round about path from Dublin, to Galway, to Cliffs of Moher to Limerick (rather than just straight from Dublin to Limerick), is that doable in one day if we leave early in the am?
