It depends. Are you connecting to another flight to another country, so that you are not staying in Switzerland? If so, you may not be allowed out of the special "transfer lounge", if they have one there. In other words, if you are not entering Switzerland, you might not even clear customs but be escorted to the restricted lounge where you can not leave until you board your plane. I know that at Heathrow in London, if you are connecting on to another country, as we did going to Munich, you are taken to the secure transfer lounge and never clear customs. You can not leave this lounge, you have to stay there until time to board your next plane. I suspect the same is true in Switzerland.
Now, if you are clearing Swiss customs and can leave the airport, with 7 hours you could feasibily have about 4-5 hours to see a bit. Allow a couple of hours for arrival/customs/etc and then you could take the train from airport to main train station in Zurich, walk around the center of town, have lunch, shop a little, then train back allowing your required 2 hour check in time for the next flight.
I have been transferring in Zurich as well in May of this year i stayed there for 10 hours and the best thing is to go out of the airport and explore the city, get your train ticket in the booth in the basement of the airport it costs about 5 SF return ticket so its not that bad much cheaper then taxi, take the train just ask anyone for downtown location it is a second stop by train there you could enjoy the walk in downtown streets and u could walk to the lakeview which is about a mile walk of the train station, by the way you train ticket works for buses of the city so if u get too far from the train station dont worry take a bus or tramway u dont have to pay for the fare. Enjoy.
Definitely get to the man Bahnhof and then walk around the old city which is directly up the Bahnhofstrasse. There is an old church - its name excapes me - (Burgmunster or something like that) that has gorgeeous stained glass windows by Chagall that are worth the walk. Also, the old town is one of the most beatutifully kept historic places I've seen - we spent one day there and wished we'd had more time. The walk along the ZurichSee was lovely but busy and too touristy for me. Zurich is definitly a place I'd like to return to and spend more time.

I had heard that there are showers for travelers in the airport in Zurich. True, if so where?
I looked at the Zurich airport website and did not see anything under services that would suggest a shower. Email them at info@uniqueairport.com
Lee: In Feb99 there were showers in the airport.

They were in the in-transit area so no need to clear Customs.
IIRC the International Arrival gates are in a long straight wing of the airport, so you only have one direction to go
At the end of this wing you will have an exit corridor to Customs on your left and a glassed-in area on your right.
In front of your is a large hall with shops & restaurants on the left. At the other end of this hall are stairs going down to the w.c., Dayrooms, and showers. At the bottom of the stairs is a door on the left to the Dayrooms where you rent the shower stalls (towel & soap included) which are located next to the w.c's to the right of the stairs.
It was ~US$6 then and they accepted foreign currencies there and also in the shops upstairs. Less hassle than using a CC for small purchases or exchanging money
