7 Days for Burgundy and Provence...which region to stay longer?

We are planning to spend a week in both Burgundy and Provence this summer. We are trying to decide which region should emphasize more. We know both regions have so much to offer. Really 7 days will not be enough time. We will be renting a car for the week. We like to do walking...touring the sites. Thoughts of staying in Beaune region for approximately 3 days and Arles region for 4 days. Any suggestions?
