5 nights in Nice - then where to unwind?

my wife & I are staying 5 nights (Fri-Wed, July 17-22) in Nice to enjoy the local areas and nearby destinations. We arrive to Milan (Malpensa) and will take the train to Nice. A question I am currently struggling with is that we have un-planned the day of Wednesday July 22 until we depart (from Milan-Malpensa) Friday 7am July 24. Our original thought was to go to Como/Bellagio but logistically is proving difficult given the short time that would remain in our trip after Nice, and given that Malpensa/Bellagio are not so close...

With that, what is your opinion on how best to spend this time? We could:

(a) extend in Nice another day, returning to Milan Thursday evening, or
(b) find a easy to get to, nearby town that would be different enough in style/culture/sites from the busy Nice/Riviera areas, yet not too far to be logistically difficult or time consuming to travel (perhaps the towns that have been recommended to see in Italy - Bordighera, Apricale, Sanremo). These would have the added benefit of closeness to Ventimiglia which shows a 7pm departure option via train back to Milan Thursday evening. This would give us all of the daytime Wednesday & Thursday for some combination of explore/relax.

What do you think would be worthwhile? I like the idea of a change of scenery for the last days & one night of our trip to experience a different feel, less busy, yet still interesting/beautiful to see. I imagine it is a tall task. So I wonder if others have any recommendations of where to go for a quick visit (special hotel/places to stay an added bonus if you have a past experience that comes to mind)?

To give an example of how this played out on a past trip to Barcelona (which we loved of course). We stayed for a week in the hustle-bustle of the city. Then for the last part of our trip, rented a car to visit the Dali museum in Figueres (140km) and stayed overnight in Begur in Costa Brava here for the nice change of pace:

scenic/beautiful/quaint, not too far, and an interesting change from the busy, crowded city. any ideas for something of this type of charming getaway to finish our trip? other thoughts?...what would you do?
