4 week trip Turkey

4 week trip Turkey
I am planning a 4 week trip in May 2016 and am trying to workout the best way to do this.
I want to do the following
- 6 days Istanbul
- 7 day self guided hiking trip Fethiye to Patara ( Current idea but open to suggestions)
- 3 day gulet trip - looking at from Kas
- beach stay possible around Cirili
- 7-10 days driving around the country side near Antayla
I am trying to figure out the logistics of it all. I am considering hiring a car for a week after the gulet trip and driving down the coast to Antayla but where would I pick up the car? All the large hire car companies seem to have cars in Fethiye or Antalya.
Our main interests are culture, food, people,nature and beach but not being amongst the crowds of tourists.
We have been to Turkey before but only to Istanbul , ephesus .
I have thought about including Cappadocia but not sure if I will - besides the landscape and a balloon ride why else would you go there?
I always like the idea of the freedom of driving around through local villages and finding good places to eat. Is the Antayla area a good place to do this?
We will be flying in and out of Istanbul and will use internal flights to Dalman and return from Antayla but want to avoid having to backtrack.
Any suggestions would be appreciated.

May is a wonderful time to visit Turkey! I spent 3.5 weeks there in May in 2012; if you haven't already seen it, you might find some ideas in my trip report. Just click on my name to find it.

Have you checked the Rough Guide or Lonely Planet guide books? They normally provide that information.

Hike, see some glorious frescos, discover how people lived in cave dwellings until just a half-century ago, visit prehistoric sites, see fascinating caravansarai ... Honestly, I have to wonder what sources of information you are using to plan your trip if you don't have an answer to this question. There is a TON to do and see in Cappadocia and each of the half dozen guidebooks I used when planning my time there gave extensive information about the options. You might not want to see or do those things, but if your guidebooks don't cover them, please consider consulting some other sources.

Possibly, the 7 days you're setting aside for Antalya and vicinity could include at least 3 days in Cap. We used our month to take in what you see in these pics. It was my second visit to the country...my wife's first.
If the balloon ride doesn't appeal, as KJA says in her last paragraph, there are many other things to jiggle your senses. Her travel is very comprehensive, well-prepared and researched.
See two parts below, segment on Istanbul and vicinity (including Bosphorus ferry)....and all other pics covering a good part of central and western Turkey, as far east as Cap, and including the rarely visited Lake District west of Konya. Happy travels!

Croesus...thanks...pics were taken on two visits, 1995 and 1999. I was doing some time with The Turkish Air Force in Kayseri and my "brass" hosts were nice enough to show me a good chunk of the countryside. Other visit was with my late wife.
Is there some problem with my pics that you're seeking answers to? Is there some time limit when a foreigner can take photos in Turkey that I'm not aware of?
I'm a rank amateur photographer. OC can vouch for that...we've corresponded on occasion as has Kja.

No problems. My only criticism might be that those Pamukkale photos could do with a date on them - too many people believe that you can still clamber all over the travertines and then are disappointed when they get there.
I don't know when they stopped it. I'm surprised that it was as late as after '99. But the tourist numbers were a lot less then. Apparently it gets a million visitors every year now.
