4 days in Provence: Avignon as base or stay in a couple/few different places

Greetings All.
I will be visiting Provence next week. I arrive Friday evening and plan to head to Tuscany Tuesday or Wednesday. I have reservations at Hotel de Blauvac in Avignon for 5 nights, but am reconsidering my itinerary. There are so many possibilities. I am wondering if it will be difficult to find hotel rooms less than E120 per night if I decide to "wing it", and just end up where the day takes me. I am a thirtysomething woman traveling alone by car. I would like to end my trip in Nice, spend my last evening and morning there before catching a train to Florence. Is this safe? What troubles might I encounter, Thoughts?

I wouldn't stay in Avignon for those 5 days. Sundays, & Monday morning are pretty dead since most (or all) shops will be closed. I would perhaps stay there on Friday & Saturday night, On Sunday, head to the market in l'Isle sur la Sorgue, and then tour the Luberon the remainder of that day. Perhaps start the Luberon tour in Gordes & see if they have rooms in Auberge de Carcarille - just below the village to the east. My Michelin Guide says rooms are 80 to 120E for a single. We've never stayed there, but we've dined there a few times. Next day you could head to the St Remy area, look for a room, and tour that area. Many shops in St Remy will be closed Monday morning, however, so visit les Baux first, then St Remy and/or Arles. There are several reasonable hotels in the St Remy area.
You could then maybe head to the Alpilles area (Vaison), or wander over towards Nice, visiting Aix on the way, and staying the next night in one of the cute villages in the Var - Cotignac, Tourtour, etc. There is an inexpensive hotel in Carces on the west-to-east one-way street through town, and another in Sillans la Cascade called les Pins.
Then head to Nice at your leisure.
I have a 20+ page Cote d'Azur & Provence itinerary that I've sent to over 800 people on this forum. It describes this Provence to Nice drive in more detail - and has additional info about Provence also. e-mail me at [email protected] if you want a copy.
There are many French holidays in May. If that weekend you are there is one of them, you might have more difficulty finding a hotel. Maybe if Kevin sees your post, he could advise you more about the holidays in that area of France & give you more info about general room availability (he owns a B&B in the Luberon).
