You can easily fill 2 days and more in Copenhagen. For day trips take one to Roskilde (wonderful cathedral, Viking boat museum with interactive exhibits). For the other - head to the castles north of the city - one is supposed to be "Hamlet's: castle and another is more historic and furnished.
I agree that Helsingor (location of "Hamlet's castle") is well worth a day trip and the town is quite pretty too. I'd also recommend a visit to Tivoli (in main square of Copenhagen) as it's a fun evening activity. Don't forget to visit the Little Mermaid and stroll along the waterfront.
I'd also recommend the Rundetaarn (Round Tower) in the centre of old town Copenhagen.
Some ideas I have come up with for a trip my dad and I are taking in June for our 5&1/2 days in Copenhagen:
I would love to hear more ideas myself
1&1/2 days Copenhagen (including arrival day, we will be arriving by train from Stockholm)
1 day to see Helsingor ( Hamlet's Castle ) or Frederiksborg Palace (OR BOTH if we get really ambitious)
1 day trip to Roskilde ( Domkirke, Viking Museum )
1 day trip to Lejre ( Sagnlandet Lejre, which is a living history iron-age village, Gammel Lejre to see the archealogical sites eg. "Beowulf's Hall, Ship Burial, Mead Hall" )
1 day trip to the island of Bornholm ( Round Churches, Hammerhaus, Cute fishing villages ), but if the weather is no good we will opt for Odense ( Birthplace of Hans Christian Anderson, picturesque village centre ) instead.
Hopefully that's given you some ideas
