3h15m layover with Easyjet in Milan Malpensa - enough time?

I'll be traveling on 2 easyjet flights connecting in Milan Malpensa in the beginning of June. The first flight is from Olbia (Sardinia) to Milan Malpensa arriving at 13:45. Then, our plan is to catch the 17:00 from Milan Malpensa to Malaga. This leaves us with 3 hours and 15 min layover. I think under normal circumstances, it will be more than sufficient. However, is this enough since we have to pick-up our luggages and re-check them in Milan? And given it is easyjet, I'm a bit hesistant on whether the first flight would be delayed significantly. I'm planning to buy the speedy boarding so that we get the seats in the front of the plane so that we can get off first.

My questions are: What is your experience with Easyjet's delay and/or possible cancellation? Has anyone flown easyjet out of Olbia?

An extra cautious alternative is to spend the night in Milan and catch the 7:45am the next morning to Malaga.

I'd greatly appreciate your advice!
