Only you know the places you want to see. Everybody has a spot they think you would be crazy not to spend days visiting so what id it you expect from in response? If your b/f has not been to Italy, then Rome, Florence and Venice are the obvious choices. Tuscany or Umbria make a sense for something "smaller" along the way.

You could stop in the Dolomites on your way from Venice to Munich at Brixen/Bressanone and maybe Alsace on your way from Munich to Paris.

Of course, the 7 places you mentioned can keep most travelers happy for 3 days each so you could be "done" your planning already.

Do you mean Amalfi, the town, or the coast itself?

I see you have listed 7 places, each of which could easily take 3 nights each.

Rome - 2
Sorrento - 3, (daytrip to Pompeii, daytrip to Amalfi coast)
Back to Rome, 1
Florence - 3, (with daytrip to Siena, maybe)
Venice - 2, followed by late departure for Verona, 1
Innsbruck - 1; (this with Verona helps break up the trip to Munich) so far, you're up to 12 nights.
Munich - 2
Paris - 3
London - 3 - total 20 nights, plus night on the plane over, is 21 nights.
It's busy, but doable if you don't mind a steady pace of travel.

With 7 locations in 21 days you'll have approximately 2.5 days in each location. Will that be enough for you in the major cities? If it is then you're all set. Your itinerary is too crowded for me because I'd want 5 days in cities such as London, Paris, or Rome. You don't have time for additional locations.

We do want a steady pace, but we do know we need to cut it somewhere.. the question is where!

What does your Europe-newbie boyfriend want to see/do in all of these places? Do you have enough time everywhere for him to see/do his wish list? Does he (and do you) understand how much time will be spent moving from place to place? I count at least 26 hours sitting on trains, not counting time spent between stations and hotels.

It's also a good idea to note where you'll be on what days of the week and then be sure that the open hours of everything you want to see will work in the time you have. For example, if your time in Florence is basically Sunday-Monday, you might have trouble seeing everything. The Uffizi and the Accademia are closed Mondays, the Bargello is open daily but only in the morning, the Medici Chapels are closed the 2nd and 4th Sundays and 1st, 3rd and 5th Mondays of the month, the climb to the top of the Duomo is closed on Sundays, and the museum of the Duomo is open daily but only in the morning on Sundays. And that's just a few of the main sights that come to mind.

That's 26 hours before you mentioned Salzburg....
