3 Week Summer Trip to France

My girlfriend and I are planning a bit of a shoestring three week trip around France at the end of July and beginning of August (unfortunately we are tied to school holidays as I work in a school). I have read this can be a really bad time to go, particularly the coastal areas because of the french holidays. Has anyone got any personal experience of this?

We are quite outdoorsie and museums are not really our cup of tea, unless they are exceptional. I have always dreamt of canoeing around the Dordogne and hiring a scooter and going around Corsica. We are planning to camp and youth hostel our way around. If anyone could reccommend trips, routes, campsites or areas to visit then it would be really appreciated!
