2 weeks in Provence

Yes, another question about Provence!
My husband and I are going to Provence in late September for 3 weeks. We found a place that does "3 day sojourns" that sounds very nice -- staying with people and mingling, cooking class, winery tour, etc. We hope to do this the last 3 days before returning home
The rest of the stay is "the problem." We wish to make a loop from Nice via Vence to Gorge du Verdon, the Luberon villages, the Cote du rhone, Arles, Aix, Marseille, Cassis ...
My question is this: should we stay in different places every 2-3 nights along the way or stay in 2 or 3 places for longer period of time? We will be renting a car arriving (or within a day or so so as not to have one in Nice?).
I hate the idea of checking in and out withing an hour or 2 of the last place (packing/unpacking) but my husband is going by Rick Steve's itinerary ...
