2 weeks in Central or Eastern Europe in August

My boyfriend and I will have approximately 2 weeks to travel following a summer living in southwestern Germany. We will already have seen a lot of Germany, so I'm looking to plan something exploring Eastern Europe or Italy.

We'd like to see the Dolomites and possibly the beaches of Croatia. I'm also interested in Slovenia, Austria, or Switzerland.

The trip will take place in mid-late August, so I'm hoping to find some less-frequently traveled places to avoid stifling crowds (though I will travel to a crowded place if it's "worth it"). We're college students and traveling on a rather tight budget.

Has anyone ever done a trip like this or could you suggest an itinerary?
