2 months in Europe: between Rome and Nice advice + general help

Hi, so 3 friends and I-- we will be 18 year old boys leaving for college -- are planning to go to europe for two months in the summer, sleeping in hostels and what-not. Because the trip is so far away (1 year) I am pretty open to changing the timing of locations.
(12 days) ITALY: rome for 5 days, then open for the week.
(3 days) COTE D'AZUR: home base in Nice and maybe explore other parts of the coast
(5 days) Barcelona
(7 days) Andalucia: sevilla granada and maybe one day in Cordoba
(4 days) Madrid plus Pamplona for bulls if timing works
(5 days) Paris
(7 days) Amsterdam as home base with possible 2 nights in bruges or other place in that region
(5 days) Berlin
(7 days) split between prague and munich, might shorten and just go to one city
(5 days) London

So those 60 days I would travel by train, but I havent just yet worked out the pass vs point-to-point issue yet.

My main issue is deciding what to do for those 7 days between Rome and Nice. We would like to see museums so florence would seem nice, but I've been there in the past and more than 2 days would probably bore us. Possible options I'd consider are keeping florence as a home base, then going to cinque terre and maybe one or two hill towns. I'd like to have some village experience here because my itinerary feels very big city focused right now. If there are any other small towns you could recommend on the whole route that would also be helpful.

Sorry if this is long but any advice from seasoned veterans would be appreciated.

P.S. Our interests would be most centered on the urban centers, but opportunities for hiking/swimming and villages would be nice here and there.
