16 nights with kids: Portugal, Spain, France?

Our family of five plans to visit Europe next summer for 16 nights. We're having a few problems narrowing down where to go and how much time to spend in each location. We've done similar timeframes in Europe the past three summers, actually a bit longer, and we don't want to just do two day stops in each place. We'd like to experience the place we're in to a certain extent. That said, I'm not sure if all 16days in one country is best. Perhaps we should divide it between countries and only do part of each, with plans to return another summer. I'm hoping for advice. We've narrowed it down to Spain, Portugal and/or south of France. We enjoy art, museums, architecture, history, hiking and exploring different cultures. We aren't for spending continual days on the beach. We like to be busy.

The initial thought was Spain and Portugal. We'd still like to do both but to do it as we planned would take longer than 16 nights (thinking Barcelona 4nts, Madrid 5nts, Seville 3nts, Lisbon 4-5nts, Porto 3nts). Can anyone recommend a way to visit both Spain and Portugal that will give us a taste of different areas but only take 16nights? Maybe dropping a day or so off Madrid and Lisbon? Or Porto?

Would visiting just Spain be 16d of similar locations or do they vary greatly such as Italy (Rome, Venice, Amalfi coast, Tuscany all very different areas if spending a block of time there)?

Or should we visit Portugal and south of France instead (maybe Lisbon 5nts, Porto 3nts, and maybe 8 nights in France?) saving Spain for another visit?

BTW I know that summer in these areas is really hot. We're ok with that. We visited Rome in mid July and even did a daytrip to Pompeii. We handled the heat just fine. Its similar to home in the summer.
