1500 mile drive from Barcelona to Bulgaria 45 days (help)

Hello to all, Introduction: Ozzie, age 43, on my third passport, Cuban Born, fluent Spanish, English, Some Portuguese and can fend for myself in Italian. Sooo for the first time, my wife and I are taking our 16 yr old son from Barcelona where we have friends to Bulgaria where we have other friends. The ideal trip for us starts with about 10 days in Spain (Barcelona and its surroundings) including Andorra and the Pirineos as well as Ibiza and Islas Canarias followed by the road trip. The route on paper takes us along the med.. coast down the west coast of Italy to Pompei. Making stops along the way. Cross to the Adriatic and catch ferry to Greece, see required stops in Greece (Athens, Santorini??) north and east to Bulgaria. visit there for about a week Sofia, the mountains and the black sea. head north through Romania, to Budapest, vienna, Prague,Berlin and start thinking of heading back to Barcelona for the return home.

There is a question or two at the end of this long paragraph I swear! We are not interested in super religious history like the Vatican for example. Interested in mingling with locals and eating where the locals eat. Very interested in places of human significance ie. Athens, Pompei, Coliseum, Tuscani, Venice, WWII significance. Wanted to go to Kosovo and see places in/of recent history. Advised against it for safety concerns (considering we are driving).
So here are some of the questions:
-Along the way, any must see stops or roads less traveled? One of the reasons we are going to eastern Europe is that I hope to see less tourists like me.
-Are there any areas we should beware/stay out of on our route?
-Has anyone done any portion of this trip and have Hostel or BnB suggestions
