It seems being only able to visit in mid October is going to cause us some restrictions to ferry travel. We probably won't even see a schedule until end July!
Sifnos looks terrific and will be our first stop from Piraeus for a few days . Santorini looks a must see too, especially as it will be less crowded then. So if we have another eight days , and bearing in mind the ferry uncertainty and restricted routes, where else should we stay? We are an active 60ish couple enjoying food and wine and beautiful sights and smaller simpler hotels.
Along the route Folegandros looks nice, also Paros (and anti Paros) could fit in perhaps?
Hope someone can help with our planning....

Island is full of beautiful areas and have many places for spending awesome time. 15 days are more for getting and visiting more places for enjoying number of less time.
Any Greece travel experts able to help?
Most of the islands you mention will be all but shut down in mid-October. Paros has a large permanent population, but Sifnos, Folegandros, and Antiparos (no one spells it anti Paros) will be limited to a few hotels and tavernas catering mostly to locals. Many of the hoteliers, restaurateurs, and shop owners on these islands live in Athens during the winter, and close up their island businesses at the end of September. Don't expect all the tavernas and restaurants you read about in the reviews to be open. I can speak specifically for Antiparos, where I spend several weeks every year. I am in my 60s and find it too quiet after mid-September.

You can still have a wonderful holiday in mid-October if you stick to larger islands on the same ferry route, e.g. Santorini, Naxos, and Paros, which also have a longer tourist season. When on Paros you can pop over to Antiparos on the car ferry from Pounta. This is the ferry that serves Antiparians who shop, work, and go to school on Paros. If you just want to chat to the locals and watch them go about their off-season pastimes, this is a wonderful time of year.
