Trip Report 12 Nights, 13 days trip to Greece

I am writing to you from Oia, Santorini. This is our third day here. I am thankful to all of you fodorites that shared your experiences and helped me plan my first time vacation in Greece. As a way of giving back to this community, I am starting my trip review and plan to keep adding as my trip progresses.
I am traveling with my husband and 14 year old. We are a pretty active family that likes to combine the 'touristy' experiences with some off-beaten endeavors as well..Mostly, we plan things and then go with the flow. We don't like structured activities or tours and like to explore on our own...
Here's our planned itinerary:
June 9- Leave Sfo, via Paris (2 hour layover), via Athens (5 hour layover), to Thira, Santorini (June 11)
June 11-14: Oia, Santorini
June 14-17: Crete
June 17- 21: Athens
From the previous reports I think some of you may disagree with our packed agenda but so far, it seems to be a confortable pace. I am seeing many Europeans around us that are spending a few days exploring each part of Greece and it works for them. But since we are traveling all the way from California, we wanted to make the most of this (not-inexpensive) trip!
