10 days Paris to Nice

We arrive Paris Sept 20 at 8:30AM and leave Nice Sept 29 at 10AM. We have traveled to Paris 3 times before so wanted to spend maybe a day there (or not) and head to Nice stopping along the way in Dijon, Beaune, Lyon, Avignon, and then to Provence and depart from Nice. I am unsure of the areas between burgundy, rhone, and provence that are the most scenic and interesting. I am sure I am trying to fit in too much. We love wine and beautiful scenery. I would like to taste but not spend hours at wineries. Since I haven't been to the area would like to get the most out of our time there. We like cities but also love romantic small towns and seaside escapes. We would like to drive a portion for some scenery and day trips but not sure which routes are best for car versus train. Any help would be appreciated.
