I'm flying into Zurich in early August, and I have 11 days before I need to be in Copenhagen for the start of a study abroad program. My plan is to take easyjet/ryanair from wherever I end up to Copenhagen, so the endpoint doesn't matter. Can anyone suggest an itinerary? I've thought about heading to Vienna, to Geneva and Aix, to Venice, or to southern Germany. I've got other time to travel, so the trip doesn't have to be comprehensive.

Zurich, Lake Constance, Ulm, Strasbourg, Trier, Luxembourg, Brugge, Amsterdam, fly to Copenhagen
I will presume that you mean that your other time to travel comes from breaks in your study program, so that you will be based in Copenhagen when those opportunities come. On that basis, you might as well stay in southern Europe for your full 11 days since it will be harder and more expensive to get there once your course starts. North Central European spots, like Amsterdam, Berlin, Central Germany and the Benelux countries can be done from Copenhagen.
11 days is not a lot of time so you might want to consider heading in one general from Zurich (west and south into France and Spain or east and south into Germany, Austria and Italy) and plan to end up in a city that has cheap and easy one way flights to Copenhagen.
The cheapest of those cities, with flights regularly under $100 are; Milan, Rome, Madrid and Paris
Vienna and Barcelona can probably be had for somewhere between $125 and $200
