10 days in Poland 7/1-12/13

Hi, We have just decided spur of the moment that we would spend some time in Poland prior to picking up our daughter from a home stay in Germany. We are a couple, mid 50's and fit. We have traveled quite a bit but have not seen Poland.
We will be coming from the Frankfurt area and must be in Kiel, Germany on 7/12/13. We plan to spend 2-3 days in Krakow, and perhaps time in Sandomierz , Krynica,or Zamosc and Zakopane, to do some hiking. If there is time, we would like to travel to Gdansk and see the city as well as the Malbork Castle.
We have done driving in various countries including Greece, and the Czech Republic back in 1990 and were able to do so safely but felt a bit harried. We do have a Garmon, which we would bring along.
We were contemplating either renting a car and driving to Krakow from Frankfurt, or flying in to Krakow and either renting a car there or perhaps getting a car and driver. We are not particularly interested in the post war reconstruction and have seen several concentration camps ,so don't plan to go to Auschwitz. We would welcome additional advice about possible areas to tour. We have been looking at the lonely planet Poland, Rick Steve's Eastern Europe and a smattering of Tripadvisor posts so far.
Does anyone have a any recommendations about a car and driver and also places to stay in the smaller towns in the SE of Poland? Has anyone had recent experience driving in Poland? Is the speed we can expect to drive still 50-60 km/hr? Looking forward to any advice about itinerary and travel plans.
