10 Days in France/No. Spain starting tomorrow

My plans have been thrown a major curve. I'm now (19 Sept) between Toulouse and Albi and have to be back in Barcelona on 1 October.

I have a car. I'm trying to figure out what to do for the 10 days. I've been criss-crossing Tarn to Aude to L-R (Montpellier) for almost 3 weeks due to work issues. Beautiful scenery but I need something new to see. I normally do not take the autoroutes but secondary or tertiary roads.

Should I go west to Biarritz/Bayonne? Head south to San Sebastian and head over to BCN?

My other concern is that with a car and a service dog, I try not to stay in cities. Finding a "gite" or self-catering house is usually best. City apartments are ok if I did not have the car.
I would like to spend some time in city sitting in a square and people watching so being somewhat close for a day trip into a city is fine.

I've poured over Stu Dudley's comments which are incredible on various regions but I for the ultimate last minute decision, I need more help!!
