1 st time France, itinerary help please

My husband and I are travelling Europe for the first time. I have planned most places but not sure of travel in the south of France. Itinerary for France so far

Paris= 5 days (booked)
Dijon =3 days (booked)
Lyon = 3days (booked). From there we were going to head to Avignon, Nimes, perhaps Arles onto Montpellier (we have 7 days to do this). This is what I'm not sure about! Do I take a different route, head west instead? We have accommodation booked in Barcelona (Sept 18). We are also debating about hiring a car in Avignon and using it for those 7 days as we're keen to explore the secondary roads and villages. If we didn't hire a car we would base ourselves (WHERE) ?? and do day trips to those places of interest.

Any suggestions would be greatly appreciated
