What should we pack?

My husband and I are doing a transatlantic cruise November 01 from Barcelona to New Orleans. It is on the new Carnival ship, Sunshine. We are spending the two months before hand traveling around Europe with only one carry on between us and two day packs. We want to 'fit in' on the cruise ship, but dont want to bring any clothes/shoes that we wont need either.
My understanding is that Carnival is a lot more relaxed than some of the others. We have only been on one cruise before, Princess to Alaska which was pretty relaxed.

Do we need formal wear? Would one skirt and a couple of nice tops do? Does my husband need a jacket?
Thanks for any advice.
