We're going on the 4 day Bahama Disney Cruise for the first time. I see on the Disney cruise website that you can pre-order bottled water. Does that mean the tap water on the cruise is not drinkable? Is it necessary to order bottled water?
I expect the kids will enjoy playing on the beach when the ship docks. Does the cruise ship supply beach towels or do we need to pack our own?

All cruises give you beach towels for use - often they are in your cabin and if they are not there when you leave, they charge you. You can also take pool towels (although they discourage that) - and many cruiselines have towels available at disembark area.
Water is safe to drink on any cruise ship. Get used to them trying to sell you stuff at any opportunity, none of which you need, some of which you may want. And even if you preferred to drink bottled water, it certainly is not necessary to pre-order - there is plenty they will be selling on board.
Don't buy a beach "excursion" from the cruiseline. While some excursions may be worthwhile, if you just want to go to the beach there will be a zillion cabs, shuttles available at dock just begging to drive you to the beach for much less money.

The beach is great for kids. We've done that 4 day trip twice and our kids have had a ball.
If your kids are a bit older or confident swimmers then you might consider renting snorkel equipment. Disney has put a few fun items in their lagoon to find while snorkling. (Including the old subs from the Disney World "20,000 Leagues Under the Sea" ride.)
In terms of the bottled water, I don't recall needing it on the Disney ship. On Castaway Cay their restaurant has drinks available.
If you think about it, it's pretty unlikely they would provide bottled water for all their crew members so the water should be potable.
Tap water is recycled sea water and while it won't kill you, isn't a good idea to drink it. On our 4-night Disney cruse they offered bottled water for free peopel leaving and returning at every port debarkation and embarkation. I loved that cruise!
