My wife and will be going on the QM2 March 16 Caribbean cruise. We are debating whether
to book the shore excursions with Cunard or locally. Some friends advise us to take them once on shore to save money. However, we are somewhat concerned about safety. On the other hand, the prices that Cunard is quoting do not seem so terribly expensive after all. We think it might be worth the extra money to avoid the hassle of dealing with a local operator once on shore. Does anyone here have any experience with Cunard in this regard? Any suggestions will be much appreciated.

If you don't mind the extra cost, I would definatly book through the ship for, like you said, peace of mind and ease.
For security and peace if mind, you are probably better off taking the cruise sponsored tours, especially since money doesn't seem to be a great concern. Also, if a cruise tour is late coming back to the ship, ship sailing will wait for the tour to return.

If the two of you are adventurous, travel savvy, know the ropes, like to do it on your own, freedom of mobility, etc., then you will be fine.
We've never taken a cruise tour. We look at what they have to offer, see what we like, then do it on our own. But, that's just us.
What ports are you hitting, and what are you interested in doing? You could get some great recommendations on this board on "doing it on your own" if you are so inclined.
