We will be cruising on the Windstar Cruise with one day in each Rhodes & Santorini. We would love some ideas on what sights to see for the day. Should we take a tour or just take taxi's?

We did self-guided historical walking tours of both places that I complied from guide books and the internet, stopping at museums, churches, etc along the way. We enjoyed that very much.
Did you use a taxi at all - or is it possible to walk the entire time?
We walked. Our ship docked very close to the old city of Rhodes. In Santorini, we needed to take the cable car or donkeys from the port up to the city of Fira.
Rhodes - I think if you're interested in just staying in town, I would do exactly what Abram did. If you want more, opt for a private tour. DH and I did and in addition to having Nicholas take us all over town and tell us about the sites, we also went to Lindos which we enjoyed. Had lunch on the beach and it was a very enjoyable day. .We still had time to shop back in Rhodes before our ship left. The company we used was Rhodes Private Tours
Santorini - Six of us opted for a private tour on this island. We went all over the island - set our own pace as to how long we wanted to stop at look around, did a small winery tour and ate lunch with a gorgeous view. Again, depends on what you want to do.
