Peanut allergies

My family and I will be on the Crown Princess in July cruising to Alaska. My youngest (18) son has peanut allergies and carries an epipen. He can be around them he just can't eat them. I've already contacted the medical dept to ask them a bunch of questions as well as purchased additional travel/medical insurance. How well do the cruise ships handle these situations? I worry most about cross contamination. The medical dept said to just email the dietary dept and alert them? How diligent are they? At home we have eaten out at chain restaurants like Friday's, McDonald's, Olive Garden, and haven't had a problem just not sure how cruises are as this is my first one.
