We wanted to eat at a very nice/expensive restaurant on St. Barts for Christmas (we plan for this to be the nicest meal we eat on our trip)...does anyone have a suggestion? We love seafood.

A few years back we had Christmas dinner at Carl Gustav and although its not my favorite restaurant at any other time of year the presentation was spectacular, the view incredible and they had dancing that night courtesy of their resident piano player.
There are many wonderful options. The top of my list of "Special Places" would be: Le Gaiac at Le Toiny, Carl Gustav, Francois Plantation, and Eden Rock.
You can't do better than Francois Plantation.
