Where do we go?!?! help 50+ couple looking for 30 anniversary trip advice

Hi. So, first time here. Anyway, my husband and I are celebrating 30 years in May and have decided to splurge on a trip away just the 2 of us. We are not big travelers (yet) and live in a small MN town where we have' t been able to find much advice. Even the travel agent has me confused, sending me links to so many different resorts my head is spinning. I don't even know if the Caribbean is a good fit, I just googled best places to travel in May and saw lots of recommendations for the Caribbean, Europe (not this year) or the wine country.
What we would like: what we see in all the commercials (:)) snorkeling, white beaches with soft sand, clear blue/green water, good food, clean and comfortable accommodations (LUXURY bedding a must and non-negotiable for me); a round of golf (just one), sunsets, a night out, a day of sight seeing (just one), did I say good food?
Unfortunately our athletic prowess has suffered d/t foot surgery for me and busy work schedule for my husband but we would try a zip line, tubing, sailing (or just sitting on one of those flat boards would do it for me), maybe a fishing excursion? We love to eat, drink on occasion (yes, margaritas will be on the menu, just not typically able to get drunk consecutive days anymore). I'd shop local fare some if able.
I'm sure we sound hokey and unaware; but, life's been complicated and we are just now getting to indulge ourselves a bit.
As far as budget, we really don't know. I guess we expected $4000-$5000 but what we've seen so far has us in a little sticker shock (that budget might cover one person).
Any and all suggestions welcome; thank you in advance.


Also: Do people ever rent mopeds for a day (saw that on a commercial) or is it too unsafe? are there waterfalls that are accessible without being adept at rock climbing?
