It unfortunate that you have only 3 nights to spend. Grand Cayman is not a place where you are trapped at your hotel and are afraid to venture out. There is so much to do. Since there are only 2 people, I believe that a hotel room will suffice. If you were to have a family of 4 or were staying a week, a condo would be a better choice. Seven Mile Beach is the place to stay for first time visitors to the island. The Ritz-Carlton is the finest hotel, but it may be over your price target. The Westin has a great beach, but the rooms are so-so. The Beach Suites is a nice place, but there is construction next door. The Marriott has a small beach. The Sunshine Suites is across the a busy street from the beach.
My vote is the Westin because you will not be spending much time in your room.
There are many good dive operators on the island. They will pick you up at your hotel. You can ask the hotel concierge. Snorkeling can be done at Cemetery Beach, the north part of Seven Mile Beach. If you area experienced snorkeler you might want to check for Testudo's snorkeling blog in your search engine. You will also want to go to Stingray City.
Restaurants are available in every price range. You can check caymangoodtaste.com for the available restaurants. It would probably take at least 2 weeks to eat at all of the restaurants that I like.
