Speaking honestly, I don't see a two-resort holiday on Anguilla giving you much variety. If you want to stay on Anguilla, stay at one resort for what it's worth.
My recommendation would be to split your time on another island rather than another resort.

They're both lovely but not that far apart on the same side of the island. If you want to stay on Anguilla & experience a difference, I would recommend selecting one of the 2 & then trying a resort on the Atlantic Ocean side of the island (Malliouhana or Frangipani. Both are on Meads Bay which is spectacular. On several occasions, we have split our time between Anguilla & St. Barts -- it's very easy to island-hop & it gives you the French/English contrast as well as terrain differences (Anguilla is flat & scrubby; St. Barts is lush & mountainous).

I'd recommend against CJ-CA combination. Not enough of a change to be worth the hassle of packing and unpacking.
I'm a big fan of multi-island trips.
I like MaryD's suggestion.
You could also easily combine Anguilla with Barbados or Nevis or one of the Virgin Islands.
