Viceroy Sugar Beach or Dorado Beach, A Ritz-Carlton Reserve

My husband and I are wanting to take a little celebration trip next summer to the Caribbean. We have narrowed our decision down to either the Viceroy Sugar Beach in St. Lucia or Dorado Beach, A Ritz-Carlton Reserve in Puerto Rico. They are both very expensive properties so I feel a lot of pressure to make the right decision!

Has anyone been to either of these properties, or even better, both? What would you recommend? Or is there another resort we should consider? We will only be going for 4-5 days so travel time needs to be kept as short as possible (flying from Nashville.) Here's what we're looking for:

Clean, quiet, romantic atmosphere.
Excellent service.
Luxurious Accommodations (prefer a plunge pool)
Excellent food/drinks/wine list.
Beautiful Spa.
Beach and/or pool service.
Fun excursions.
