Turks & Caicos ofr New Years

My wife and I usually travel far and wide (just back from Japan, before that Sicily, before that Hawaii..) but have decided to go somewhere closer (less than 4 hours from NYC) for New Years 2015/16 for one week for some much needed R&R. The most we've spent somewhere is $500 per night (on Grand Cayman and Lanai) but generally we try to stay well below that. We are easy travelers and like to get out and about (rather than veg on the beach all day although we love to swim and snorkel). We also enjoy good food and drink. We've booked a week at Caribbean Paradise (inexpensive and frankly there was very little left even this far in advance). Looks to be in a good location and not too shabby(?). I've downloaded some maps. Will have a car. Would also love to bike around. Want to book a res for New Year's dinner somewhere special. Any thoughts or other suggestions would be greatly appreciated.
