We are trying to decide on an island for our honeymoon that has more to offer than relaxing on a beach- we would be bored after a day. We enjoy fun, beaches, wine, food, adventurous activities (Parasailing, swim with dolphins, bicycling, hiking, zip-lining, snorkeling, horseback riding, etc...), and importantly a night life. Do not want to go to any island that is highly recommended to not leave the resort such as some areas in Dominican Republic. Would love to go to an island that has caves or rainforest. We were thinking St. Kitts/Nevis, Barbados, St. Lucia, Grenada?

I would actually go to Puerto Rico, I've heard from people that went there that they have great ziplining, and beaches. Out of the four you've mentioned I would go to Nevis. The Four Seasons in Nevis is beautiful, but expensive (it is 5-star), but its your honeymoon so who cares.
Your not going to find a Caribbean island with everything you're looking for.
For adventure and some beaches you mit want to check out Costa Rica.
While not zip lining, but maybe everything else, I'd check out Cabos.
Parts of Mexico might work too, and should have everything you're looking for.
Mexico is dirty and filled with crime, plus the water isn't purified, so Mexico doesn't make much sense
You won't find parasailing or swimming with dolphins on either St. Kitts or Nevis and snorkeling around either island is only average to below average at best when compared to Bonaire or the BVI's (the latter I know is not on your short list). There's is zip lining on St. Kitts but not on Nevis although both islands have rain forests. Nevis is not noted for nightlife while St. Kitts has a little but it's not a major draw. Based on OP's list of requirements St. Kitts/Nevis may fall short of their expectations.
Blamona is right, OP won't find an island that has everything on his/her list. OP should list their desires in order of preference as they will have to make some concessions.
If they want snorekling they should go to Grand Cayman
I think you will find most everything you are looking for in the Playa del Carmen/Riviera Maya area of Mexico.
CDT51 obviously hasn't been to Mexico by their statement, which is not all that accurate. We've been going for the last 10 years and there is plenty to see and do off the resorts that will fit your criteria. That is one of the reasons why we keep going. We are very active on vacation. Lying on a beach or hanging at the resort for 7 days is not what we call a vacation.
Here are a couple of tour operators to check and see what is exactly offered. We have used them several times with no problems:

If you are not for tours, no problem it just gives a good reference.
For ziplining try alltournativetours.com or Xplor.com
Snorkling in Cenotes, Xel-Ha, or Xcaret or hiddenworlds.com. Swim with the dolphins at Xel-Ha.
Caves at Ak Tun Chen
Several Mayan Ruins; Tulum, Chichen Itza, Coba
5th Avenue in Playa del Carmen is miles of pestradin walkway with tons of bars, restaurants, entertainment and shopping.
Last year we did an eco tour at the Sian Ka'an Biosphere. Some of the best snorkeling we've done.
If interested check our vacation photos. We've been to several Caribbean Islands as well as Mexico many times:

Congrats!
jademountain.com good but expensive also private plunge pools.
Mexico and CR are not "islands" persay
but do offer what you are seeking Belize also.
More safety issues than Barbados though more rain
usually except in winter weather2travel.com climate guides.
luxurylink.com good screening site for other options...
Good luck!
I'm just saying they would rather go to a more friendly island than Mexico, although it is nice
CDT51, I have found nothing but friendly, hospitable people in Mexico in the last 10 years and would not hestiate to return to Mexico or recommend to anyone. Making blank inaccuarte comments about a destination in which you have obviously never been to is not helpful to anyone. Unless you have true first hand knowledge and not just info you read about somewhere or were told by someone, such comments are quite uneccessary and only meant as a scare tactic. Please don't discourage others from a really great destination based on your ill-guided information. Giving factual information and letting the OP make the final decision is more helpful.
KVR, you didn't have any problems with the drugs or the crime? Did you stay at an all-inclusive resort? I was just wondering, because I was planning a trip with my father, and he says Mexico is not as nice as some other places.
travelertime, I have been to Cozumel 4 times, Playa del Carmen 3 times, Cancun twice and Isla Mujeras once. Never had any issues with drugs or crime. We have stayed at AI resorts each time except last year when we went to Playa and 2 of our trips to Cozumel were cruises.
Even though we prefer AI resorts for the convenience, we do not hang at the resort. We are very active on vacation and love tours. We have taken taxis to Xel-Ha and Xcaret. Walked around 5th Avenue in Playa, downtown in Cozumel and around Cancun even at night.
I don't know what "Mexico is not as nice as some other places" mean. We have been to various Caribbean Islands also. Never had any issues with drug or crime either, but I would not return to St. Thomas just because there seems to be more issues with crime there than other places we've been to, plus I didn't like it. Check out the crime thread on St. Martin posted here also.
Most of the news media hype about Mexico is border towns, not tourist areas. We usually go to Mexico in December, but this year we decided to return to Jamaica. Jamaica has it's issues also and I can honestly say that I feel more comfortable walking off a resort and exploring in Mexico than I do in Jamaica, but that doesn't stop me from going to Jamaica. I also feel Mexico has just more things to see and do off property and the snorkeling is much better.
Check out my picture site. My trip reports are posted here and on Trip Advisor also.
