Travelling with Young Kids and Grandparents

Hello -- I am looking at home rental options in the Caribbean and Mexico for a week this winter with my family (we have three boys under 5), as well as two sets of grandparents. Ideally we are looking for a rental house with a pool, is a short walk to the beach, and also walkable to a town where we can pick up breakfast, take the kids for ice cream, etc.

We did Playa del Carmen (Riviera Maya) a couple of years ago and had a great experience. We're just looking for any other ideas of places that might be good for us. It seems like many Caribbean Islands are more centered around hotels/resorts then towns.

Any help is greatly appreciated.
