If you just have one day then I'd suggest you consider one of two options.
Pigeon Point is probably the best beach in the 'touristy' area in the South West and has nice sand and a very picturesque little pier. Although it was fine when I was there, I have heard that it can be busy when cruise ships are in however. There is a small entrance fee.
If you're feeling a little more adventurous then try Englishman's Bay. This is also a very pretty beach, but it's out of the main tourist area, so it's also very quiet and has an unspoilt feel. It also has less facilities of course.
