Tobago - Hilton and Currency

In a couple of months, my wife and i will be spending a week at the Tobago Hilton.
I'd appreciate any comments from anyone who has stayed at thhis hotel regarding, food quality/prices etc (I expect it will be a bit more expensive than local restaurants, being a Hilton)

In addition, what's the best currency to take, I'll be coming from the UK. Should I bring GBP or USD travellers cheques to convert to TT$? USD cash ?
