Staniel Cay surrounds - end of year

Hello, all Staniel Cay, Exumas and Out Island lovers: Please help us (wife, 14 year old daughter and I) finalize our plans for the end of this year in the Out Islands. We arrive in Nassau from NYC - Christmas Day afternoon. It seems that (understandably) the Out Islands are closed for local travel that day. We need a place to stay (+-$200) for the evening and then plan to catch a flight to SC the following morning (Flamingo Air - although my wife will need drugs to handle the small plane). We stay at SCYC until the 29th and hope to travel to another nearby island. We are trying to figure out where to go from SC and how to get there (for something less than an arm and a leg). We are hoping for something with similar natural beauty - long white, turquoise-water beaches - but a small step up in activity (no cruise ships or tourist shopping, please). Eleuthera looks beautiful and sounds great but challenging to get to. We hope to stay somewhere through the New Year weekend (<$500/night). We know it is late in the process to be planning but hope to be diligent, maybe catch a cancellation, find a compromise place or pay more than we'd like. No interest in a high end spa or AI. To those who have spent time in and know this part of the world (our first trip), your input would be invaluable to us and very appreciated. Thank you, in advance!!
